We love pumkin seeds. We cleaned out just enough from tonights four sugar pumpkins to fill a baking sheet. Toss with a little olive oil, salt and pepper, bake at 375 F for about 25 minutes. Ready when toasted golden brown.

This is what I miss now that I no longer "do" pumpkins... I like them with a little olive oil, too.
It is the simple things that are SOooooo good.
