In my never-ending quest to find (and sometimes create) new recipes using up the flavors of the season, I created these unique and tasty persimmon popsicles. It's going to be (another) hot one today and these will be great for the kiddos to enjoy while chasing chickens in the backyard after school.
I love popsicle molds because they offer a visually exciting opportunity to sneak some more good nutrients into the little ones that I might not normally be able to get them to try. I mean, look at these. Even the pickiest eaters couldn't deny themselves a beautiful, fruity pop!
Using my Breville Juice Extractor, I juiced:
- 8 ripe persimmons
- 2 apples
Then I added to the juice:
- juice from 1 lemon
- 1 Tablespoon of agave nectar
Stir ingredients until combined and pour into your favorite popsicle molds.
When first experimenting with juicing persimmons, I found the flavor to be a little flat without any additions. But adding the apple, lemon juice and agave nectar gave it just the right amount of sweetness and flavor.
