Lemons are in full swing, and this year, like every year before it, we have a bumper crop. Why? I have no idea. I can't get my tangerine tree or kumkuat trees to fruit for the life of me, but that little meyer lemon tree just won't quit. And what's more, my MIL gifted me with a 10lb. bag of lemons that someone gave her and she knew she couldn't use. So this week it's been all about lemons. If not just in my water, then in my pasta, on my chicken and tonight, in my cake(s).
These are little mini lemon pound cakes made with an adorable 'backyard bug pan', a birthday gift from a friend.
I used Martha Stewart's Glazed Lemon Pound Cake recipe but make bumped up the zest and juice quantities to 3 lemons (hers uses 2) because I like a lot of lemon flavor. I didn't use her glaze recipe, but another one I had that incorporated zest. But now that I look back, I think MS's recipe is best. So I'll leave you with that.
