The other day, *someone* (under four feet tall) was disappointed in me for not doing more of *something* (what, I can't remember). All that matters is my comeback:
"Look at Mama... ah-ah-ah... Right here - look into my eyes... Do you know that there are FOUR zucchini plants in our backyard right now? Do you have any idea what that means?!? It means this summer, it's all about zucchini, and not a lot else!! In fact, it's the Summer of the Crooked Neck Squash! Didn't know that, did ya?? It's the whole reason you are in summer camp - so I can effectively, and efficiently, use up all this zucchini. So no, I can't do XY or Z for you this season. I have to bake 1,213 more batches of zucchini bread for freezing. Afterall, winter is almost here!!!"
Thank you to one of my oldest friends, Sunny, for directing me to Nigella's Zucchini Fritters. This delicious recipe offered us a respite from the usual stuff. I was able to quickly make a batch of these for dinner last week, and shared them with another old friend who came to dinner (hi, Jenny!). I continued to power through the batter the next day when I realized the obvious - zucchini fritters are even better when you put an egg on top!
