This last week of dinners did not turn out as magically as hoped. When I made my Family-Dinner-or-Die-New-Year's-resolution, I forgot to prepare myself mentally for the inevitable no-can-do sort of nights. They are more frequent than I want to admit. And as I bang this out, I realize there has been a thread of I-almost-blew-dinner-that-night woven through all three of these summary posts. I might have to rethink my attack...or I might have to get just a bit more organized...to be continued.
SUNDAY: Chicken basil sausage (from Sam the Butcher) which I served up with a mess of roasted and sauteed vegetables: butternut squash, potatoes, onions, asparagus and mushrooms, all tossed with pine nuts and goat cheese. My kids were not amused.
MONDAY: Home cooked dinner failure #1. When you have to fail at putting a bit of heart into a meal, best to just go out and buy one where someone else did. The Chicken Pot Pie from Woodland's Grocery is better than homemade, certainly my homemade. It's something in the crust, plus the add-ins of zucchini and squash. I'll never make another again. We love this dinner!
TUESDAY: Late getting home, I was stuffed from a large lunch, kids ate pasta and red sauce. :-/
WEDNESDAY: I recreated the delicious sweet potato and black bean enchiladas I watched my friend whip up at her house the week before. Mine were, of course, not nearly as good.
THURSDAY: Chicken Cutlets with bruschetta and steamed broccoli. This one is quickly becoming a favorite.
FRIDAY: Steak Fajitas. I've been doing this meal ever since college. Not sure where I got the idea but it probably had something to do with Chevy's.
SATURDAY: Dinner out at PF Chang's with Nana. We always get the same things: crispy green beans to start, kung pao chicken, mu shu pork, beef and broccoli, and garlic noodles. I might have gone to bed with heartburn.
SUNDAY: We were lucky enough to be invited over to our neighbor's house for the Super Bowl. Our team may not have won, but we were spoiled with good company and pizza from Picco's!
