MONDAY: Cheeseburgers with avocado, served with Parmesan-Roasted Broccoli. I always buy lean, grass-fed beef and mix it with a handful of diced red onion, an egg, salt and breadcrumbs.
TUESDAY: Pesto Pasta and Arugula Butternut Squash Salad. (This salad is incredible. We eat it about once a week during the winter. I like to make double batches of squash, buy extra greens, and just repeat the salad throughout the week. See Friday and Sunday.)
WEDNESDAY: Roasted Salmon with Green Herbs, Couscous with Pine Nuts. Pink fish served on an earthy colored grain does not photograph very well under fluorescent lights. But it sure looked pretty going into the oven!
THURSDAY: Date night. Kids ate one of these tasty pies, and we ate sushi.
FRIDAY: Sole Meuniere, Couscous (left over) and arugula salad (again!), zucchini cakes (from Costco). Nobody loves this fish dish more than my kids. They fight over seconds.
SATURDAY: Wonderful dinner out at Assab Eritrean Restaurant (2845 Geary Blvd, San Francisco). We ordered all our dishes with no spice, and had a blast sharing one giant platter, using nothing but our hands.
SUNDAY: Pork Rib Roast Glazed with Honey-Mustard. (This recipe is from my Best of Food and Wine cookbook, 1997!) Served with roasted carrots, potatoes and onions. We may have also enjoyed a little arugula and butternut squash salad with it...again.
